How to make a banana cake in 5 minutes (no microwave, I promise!)


The benefits of having a raw kitchen are catching on and many people are really enjoying a predominately raw diet, with foods that are naturally packed with minerals, vitamins and digestive enzymes.

This cake may not be completely raw, as it includes pre-puffed rice, millet and kamut, but it comes very close! It can be made in 5 minutes, and in your stomach within 10 minutes.

You will need:

1. To blend the following ingredients in your blender:
– 2 bananas
– 1 tbsp honey
– 1 tbsp coconut oil (liquid/melted)
– 1 cup coconut water

2. To mix the following dry ingredients in a mixing bowl:
– 2 cups puffed rice
– 2 cups puffed kamut
– 1 cup puffed millet
(Adjust the above to suit whatever puffed ingredients you have in your pantry.)
– 1 cup oats
– 1 cup slivered almonds

3. To mix the wet ingredients with the dry ingredients quickly with a wooden spoon. Reach a moist but firm/sticky consistency – just add more puffed millet if required to make it more firm. PLUS mix 1 tbsp of Chia Seeds at the end and stir thoroughly.

4. To transfer the whole lot into a glass casserole or serving dish. Press and flatten it with the back of a spoon so it is a perfect rectangle block, smooth on top.

5. To dress with sliced strawberries, a sprinkle of cinnamon, and a drizzle of honey.

Slice with a knife, lift onto your plate, and enjoy! A refreshing cold cake, sweet and filling (more satisfying than a cheesecake, I say!)

Refrigerate the remaining cake and enjoy it cold for morning-tea the next day.

You could even slice 2 pieces and layer them (as I have demonstrated in this photo), and spread cream – dairy or coconut – between the layers.

This recipe is sugar-free, dairy-free, vegan, healthy, and also friendly for coeliacs (gluten-free so long as you buy a suitable, quality selection of puffed ingredients and oats).
